Shorter than Cleveland’s other floor-model steam kettles, this Cleveland KEL-40-SH electric kettle is part of the Short Series™ and measures 34 1⁄2 inches wide by 44 inches deep by 35 7⁄8 inches high. This stationary unit features an open tri-leg base with flanged leveling feet that can be bolted into the floor to secure the kettle in place throughout use. The kettle and exterior surfaces are made of durable, corrosion-resistant type 304 stainless steel and feature a No. 4 finish that can be wiped clean. Throughout cooking, the spring-assisted cover can shield product from contaminants and preserve temperatures. So the kettle’s rolled rim isn’t damaged when the cover is closed repeatedly, it features a reinforced design.

To heat its steam jacket, the Cleveland KEL-40-SH kettle requires attachment to an electrical hook-up. This kettle is self-contained, meaning its jacket is permanently filled with treated water, and it doesn’t need to be refilled or vented, which helps eliminate hands-on maintenance tasks. The jacket surrounds the full kettle for an even heat distribution and is rated at 50 PSI to withstand high cooking temperatures. Designed to cook soup, stew, pasta, rice, and sauce, the unit has a 40-gallon capacity, and users can adjust temperatures from 145 to 260 degrees Fahrenheit with the solid-state temperature controls. Because it’s a stationary system, thick, chunky product must be scooped out, while liquids can be removed from the 2-inch tangent draw-off valve, which includes a strainer to prevent expulsion of solid foods.
